  • 3 tbsp extra virgin olive oil
  • 1 piece Pecorino Romano cheese cleaned, crust
  • 8 pork rashers
  • 8 pork rinds from the rashers
  • 1 pork ribs cut in pieces, small rack
  • 250 gms pork sausage Sicilian, with fennel, 9 oz
  • 280 gms tomato paste 10 oz
  • 150 gms tomato puree 5 oz
  • 1 tbsp tomato concentrate or more tomato paste, estratto, triple
  • salt to taste

  • 500 gms troccoli 1 lb
  • Pecorino Romano cheese finely grated to serve, more
