Ingredients

  • 1 1/2 cups rolled oats
  • 1 cup flour
  • 1/2 cup brown sugar , packed
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter , cubed
  • 1/2 cup sweetened shredded coconut
For the filling:
  • 1 cup pineapple jam , or Pineapple Topping
For the coconut glaze:
  • 1 cup powdered sugar
  • 2-3 tablespoons water
  • 1 teaspoon coconut extract

Instructions

  1. Preheat the oven to 350ºF and line an 8-inch square baking dish with parchment paper or baking spray.
  2. In a large bowl combine together the flour, oats, brown sugar, baking powder, cinnamon, and salt.
  3. Add the cubed butter and mix with your hands until crumbly.
  4. Set aside half the oat mixture for topping, and mix with the sweetened shredded coconut.
  5. Press with a spatula or your hands the remaining batter evenly into the bottom of the prepared baking dish.
  6. Add the pineapple jam and crumble the reserved oat mixture over the jam.
  7. Bake for 25 to 30 minutes or until the topping is golden.
  8. Cool completely in the baking dish on a wire rack.
  9. When cooled, make the coconut glaze. Whisk together the sugar, water, and coconut extract in a small bowl.
  10. Drizzle the coconut glaze on top and let harden for 20 minutes before slicing.
