Tropical Salsa

A simple and flavorful recipe that's sure to be a favorite.

Ingredients

  • 3 ripe heirloom tomatoes or regular tomatoes, washed and diced
  • 1 cup diced fresh pineapple don't use the canned stuff
  • 1/2 jalapeño deseeded and minced (if you like it a little spicier, add the whole pepper minus the seeds, or add the seeds if you're a daredevil)
  • 1/4 cup chopped fresh parsley I used leaves from about 4 sprigs
  • 1/2 tsp salt or to taste if you like it salter
  • 2 tsp olive oil

Instructions

  1. Combine all ingredients and gently mix together. Let sit in the fridge for about an hour to to let the flavours marry together, but if you're hungry, it's great fresh as well. Serve with tortilla chips, and enjoy!
