Tuna Quesadillas
Chunks of tuna, sweetcorn, and red onions slathered in mayonnaise and topped with oozing cheese. A great lunch or even a brilliant afternoon snack for the kids!

Ingredients
- 200 g tuna canned
- 50 g sweetcorn
- 1 onions
- 100 g mayonnaise
- tortilla
- mozzarella cheese
Instructions
- In a bowl add the canned tuna, finely diced red onion, sweetcorn, and mayonnaise then mix until all the ingredients are evenly combined
- Drizzle olive oil onto a griddle pan and brush the oil over the pan
- Add a flour tortilla and top with mozzarella cheese and the tuna mixture
- Top with more cheese and finish with a flour tortilla on top
- Brush the top of the tortilla with some oil
- Allow the quesadilla to cook for 2-3 minutes on medium heat until the bottom side is lightly browned
- Flip over and allow to cook for a further 2-3 minutes until lightly browned
- Cut the quesadillas into slices and enjoy warm!
