Tuna Stuffed Avocado

This Tuna Stuffed Avocado is stuffed with a flavorful southwest mixture of tuna, bell pepper, jalapeno, and cilantro. No mayo necessary here! It's the perfect simple lunch.

Ingredients

  • 1 avocado halved and pitted
  • 1 (5 ounce can) solid white albacore tuna
  • ¼ cup diced red bell pepper
  • 1 tablespoons minced jalapeño
  • 1/4 cup chopped fresh cilantro
  • 1 tablespoon lime juice
  • salt and pepper to taste

Instructions

  1. Scoop out a portion of the avocado from the pitted area to enlarge the "bowl" section. Transfer the removed avocado to a medium-sized mixing bowl and mash it with a fork.
  2. Add the tuna, red bell pepper, jalapeno, and cilantro to the bowl. Drizzle lime juice over the mixture. Stir everything together until well combined.
  3. Fill the avocado halves with the tuna mixture. Season with salt and pepper to taste.
