This Tuna Stuffed Avocado is stuffed with a flavorful southwest mixture of tuna, bell pepper, jalapeno, and cilantro. No mayo necessary here! It's the perfect simple lunch.

- 1 avocado halved and pitted
- 1 (5 ounce can) solid white albacore tuna
- ¼ cup diced red bell pepper
- 1 tablespoons minced jalapeño
- 1/4 cup chopped fresh cilantro
- 1 tablespoon lime juice
- salt and pepper to taste

Instructions
- Scoop out a portion of the avocado from the pitted area to enlarge the "bowl" section. Transfer the removed avocado to a medium-sized mixing bowl and mash it with a fork.
- Add the tuna, red bell pepper, jalapeno, and cilantro to the bowl. Drizzle lime juice over the mixture. Stir everything together until well combined.
- Fill the avocado halves with the tuna mixture. Season with salt and pepper to taste.
