Tuna Stuffed Zucchini Boats
Tuna Stuffed Zucchini Boats feature zucchini halves hollowed out and filled with a tuna mixture that includes sauteed zucchini flesh and red onion. Ingredients
- 2 zucchini
- 1 can tuna with jalapenos and olive oil
- 1/4 cup red onion chopped
- 1/4 cup cheddar cheese shredded
Instructions
- Preheat the oven to 400 F.
- Cut the zucchini in half, and use a spoon to scoop out the insides. Chop the zucchini insides.
- Heat a frying pan over medium heat. Open the tuna can and pour some of the olive oil into the pan.
- Saute the zucchini insides and red onion in the olive oil for 5 minutes.
- Stir in the tuna.
- Stuff the zucchini shells with the mixture and top with cheddar cheese.
- Bake for 20-25 minutes.
