  • 1 can tuna with jalapenos and olive oil

  • 1/4 cup cheddar cheese shredded

Instructions

  1. Preheat the oven to 400 F.
  2. Cut the zucchini in half, and use a spoon to scoop out the insides. Chop the zucchini insides.
  3. Heat a frying pan over medium heat. Open the tuna can and pour some of the olive oil into the pan.
  4. Saute the zucchini insides and red onion in the olive oil for 5 minutes.
  5. Stir in the tuna.
  6. Stuff the zucchini shells with the mixture and top with cheddar cheese.
  7. Bake for 20-25 minutes.
