Tuna Stuffed Zucchini Boats
Description
Tuna Stuffed Zucchini Boats start with halved zucchinis that are scooped to create hollow shells, while the scooped zucchini insides are chopped and sauteed with red onion in olive oil. Adding a can of tuna packed with jalapenos and olive oil brings moistness and a subtle spicy note to the filling. Once assembled with the tuna mixture and topped with shredded cheddar, the zucchini boats bake at 400°F for about 20-25 minutes until the cheese melts and the zucchini softens to a tender texture. This dish works well as a light dinner or a savory side, combining the freshness of zucchini with the richness of tuna and cheese. The assembly and baking method ensure the flavors meld while keeping the zucchinis intact enough to hold the filling during serving.
