Turkey & Avocado Torta with Chipotle Aioli

Use up that leftover turkey and make a Turkey & Avocado Torta with Chipotle Aioli.  This Mexican sandwich is a much-needed change in flavor when we're all trying to use up those Thanksgiving leftovers!

Ingredients

Chipotle Aioli
  • 1 cup mayo
  • 1 garlic clove
  • 1 can chipotles in adobo (1 chipotle from can)
  • salt & pepper to taste
Tortas
  • 4 large rolls (ideally Bolillo or Telera rolls) cut in half
  • 2 avocados
  • 2 cups leftover sliced turkey
  • 4 slices of cheese
  • shredded lettuce
  • Optional toppings: cilantro, pickled jalapeno slices, tomato, onion, refried beans, hot sauce

Instructions

  1. Make Chipotle Aioli: add mayo, chipotle pepper, garlic, and salt & pepper to a small food processor. Blend until fully combined and there are no chunks of garlic.
  2. Spread a good amount of the chipotle aioli on the bottom half of each roll. Top with turkey, onion, and a slice of cheese. Do this with all four rolls and place all the rolls (tops & bottoms) open-faced on a large baking sheet. Place under broiler until cheese is melted and rolls have turned golden.
  3. Mash two avocados and season with salt and pepper.
  4. Top turkey halves of rolls with desired toppings. Spread mashed avocado on the roll tops and place on top of the turkey halves. Enjoy!
