Ingredients

  • 1 tablespoon olive oil
  • 1 small red onion diced
  • 1 bell pepper diced (any color)
  • 3 cloves garlic minced
  • 16 ounces ground turkey
  • 1 1/4 cups salsa
  • 2 tablespoons taco seasoning plus more to taste
  • 1/2 cup water
  • 2 cups cooked brown rice
  • 1 cup black beans drained and rinsed
  • 1 avocado sliced
  • 1/2 cup shredded Monterey jack cheese
  • 1/4 cup fresh cilantro chopped
  • Lime wedges for serving

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add diced onion, bell pepper, and minced garlic, sauté until soft.
  2. Add ground turkey and cook until no longer pink, breaking it into small pieces as it cooks. Drain excess liquid from skillet.
  3. Stir in salsa, taco seasoning, and water. Bring to a boil, then reduce heat and simmer for about 10 minutes. Most of the liquid will be gone, and the mixture will thicken.
  4. Assemble the bowls with brown rice at the bottom.
  5. Top with the turkey mixture, black beans, avocado slices, shredded cheese, and fresh cilantro. Serve with fresh lime wedges for squeezing.
