Ingredients
- 1 leftover turkey carcass , excess fat removed (from a 14-pound turkey)
- 6 cups chicken broth
- 1/2 cup uncooked long-grain rice
- 1 yellow onion , chopped
- 4 stalks celery , chopped
- 2 carrots , chopped
- 1 bay leaf
- 1 teaspoon kosher salt
- 1/2 teaspoon coarse ground pepper
- 2 cloves garlic , minced
- 1/2 teaspoon rosemary
- 1/2 teaspoon thyme
- salt , to taste
Instructions
- Add the turkey carcass and broth to a large dutch oven.
- Bring to a boil, then reduce to a simmer.
- Cover and cook for 3-4 hours.
- Remove the bones from the pot, add in the rice, onions, celery, carrots, bay leaf, salt, pepper, garlic, rosemary and thyme.
- Cover and continue to simmer for 20 minutes until rice is cooked.
