Turkey Chilli with Baked Beans

A fabulously tasty chilli made with turkey breast mince and baked beans - so delicious and healthy!

Ingredients

  • 500 g turkey breast mince
  • 3 tbsp rapeseed oil
  • 1 large onion finely chopped
  • 250 ml water
  • 1 x 420g tin Baked beans
  • 1 x 400g tin chopped tomatoes
  • 4 Cloves of garlic crushed
  • 1 ½ tbsp hot chilli powder or to taste
  • ½ tsp ground cumin
  • ½ tsp ground coriander
  • ½ tsp smoked paprika
  • ½ tsp dried oregano
  • ½ tsp cayenne pepper
  • Freshly ground salt & pepper

Instructions

  1. Heat 1 tbsp of oil in a large pan on a gentle heat and sweat the onions until soft.
  2. Add another tbsp of oil and then turn up the heat to fry turkey mince until cooked.
  3. Then add another tbsp of oil plus the garlic, spices, herbs and seasoning and cook for a minute before adding the chopped tomatoes, baked beans and water.
  4. Bring to the boil then cover and simmer for 30 minutes.
  5. Serve on a bed of rice.
