Turkey Lettuce Wraps

Ingredients

  • 1 tablespoon olive oil
  • 1 pound ground turkey
  • 2 cloves garlic minced
  • 1 small onion diced
  • 1 red bell pepper diced
  • 1/4 cup hoisin sauce
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1/2 teaspoon freshly grated ginger
  • 1 8 oz can water chestnuts, drained and diced
  • 3 green onions thinly sliced
  • 1 head butter lettuce or romaine lettuce large leaves separated

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add ground turkey and cook until browned, about 5-7 minutes, breaking it up as it cooks.
  2. Add garlic, onion, and red bell pepper to the skillet. Cook, stirring frequently, until vegetables are tender, about 3-4 minutes.
  3. Stir in hoisin sauce, soy sauce, rice vinegar, and ginger. Add water chestnuts and green onions. Cook for another 2-3 minutes until everything is well combined and heated through.
  4. To serve, spoon several tablespoons of the turkey mixture into the center of each lettuce leaf. Wrap and enjoy!
