Turkey Meatball Curry

Turkey Meatball Curry cooked in a delicious tomato and coconut sauce, a fantastic Indian-style family dinner that is quick and easy to make. And so nutritious too!

Ingredients

For the meatballs
  • 500 g Turkey mince ( 1 lb ground turkey)
  • 1 onion small
  • 1 teaspoon curry powder mild
  • ½ teaspoon salt
  • ⅛ teaspoon black pepper ground
  • 1 tablespoon vegetable oil
For the sauce
  • 1 onion
  • 3 garlic cloves, minced
  • 1 tablespoon ginger puree
  • 1 tablespoon curry powder mild
  • 1 teaspoon Turmeric ground
  • 1 teaspoon cumin ground
  • 1 teaspoon ground coriander
  • 1 tin coconut milk (400 g, 13 oz)
  • 1 tin tomato 400 g, 13 oz, chopped
  • 2 tablespoon vegetable oil
  • ½ teaspoon salt
  • ⅛ teaspoon black pepper ground
  • 1 tablespoon parsley chopped fresh, or coriander

Instructions

  1. To make the meatballs, add the turkey mince, onion, curry powder and seasoning to a ball and mix to combine.
  2. Use your hands to shape 20 meatballs.
  3. Heat up the oil in a frying pan, and lightly brown the meatballs in batches.
  4. Remove from the heat and set aside.
  5. In a large pan, heat up the remaining oil, and add the chopped onion.
  6. Fry until translucent.
  7. Add the minced garlic and ginger and fry for a further 30 seconds.
  8. Add the spices and seasoning, and mix well.
  9. In go the coconut milk, chopped tomatoes and meatballs.
  10. Leave to cook on a medium heat until the sauce is reduced and the meatballs are cooked through.
  11. Garnish with fresh parsley or coriander.
