Turkey Salad

Simple and creamy salad, a great way to use turkey leftovers!

Ingredients

  • 2 cups cooked chopped turkey
  • ½ cup mayonnaise
  • 1 teaspoon Dijon mustard
  • ½ cup dried cranberries
  • ¼ cup Chopped Pecans optional
  • 1 rib celery chopped
  • 2 green onions or 1 tablespoon finely diced red onion
  • salt and pepper to taste

Instructions

  1. In a medium bowl, combine the turkey, mayonnaise, mustard, cranberries, pecans, celery, and green onions in a bowl.
  2. Stir to combine and season with salt and pepper to taste. Refrigerate for at least 30 minutes before serving.
  3. Serve as a sandwich or over salad.

Notes

  • Replace pecans with toasted almonds if desired. Diced apples or chopped seedless can be added.
  • Store left over salad in the fridge in a covered container for up to 4 days.
