Turkish Eggs (Çılbır)

Ingredients

  • 3/4 cup plain greek yogurt
  • 1 garlic clove minced
  • salt to taste
  • 2 large eggs
  • 1 tablespoon white vinegar
  • 3 tablespoons olive oil
  • 2 teaspoons Aleppo pepper flakes
  • 1/2 teaspoon smoked paprika
  • Fresh dill for garnish

Instructions

  1. Combine the Greek yogurt with minced garlic and a pinch of salt in a bowl. Mix well and set aside at room temperature.
  2. Bring a pot of water to a gentle boil and add the vinegar. Crack each egg into a separate small bowl. Gently slide the eggs into the water one at a time, cooking for about 3 minutes until the whites are set but yolks remain runny.
  3. While the eggs are poaching, heat the olive oil in a small pan and add the Aleppo pepper flakes and smoked paprika. Cook for about 30 seconds.
  4. Place the yogurt mixture in two bowls, top each with a poached egg, and drizzle with the spiced olive oil and garnish with dill. Serve immediately.
