Ingredients
- 1/2 lb salmon fillets portioned into 4 pieces
- 5 tbsp tzatziki
- 1/3 cup panko
- 1/5 cup Parmesan Cheese skip if you want to cut down on calories
- 1/5 cup butter
- 1 tsp mustard powder
- 1 tbsp honey
Instructions
- Heat your oven (my salmon's instructions states 450F)
- Slice up the salmon and place them on a baking pan (coated with non-sticking spray) and spread a thin layer of tzatziki on each fillet.
- In a small bowl, combine the panko, parmesan cheese, butter, mustard, and honey. Evenly spoon the panko mix onto the tzatziki on top of the salmon fillet.
- Bake for 17 minutes and either serve immediately or eat cold the next day for lunch.
- Optional: while the salmon is baking, you can either prep some carb or salad to go with it. I made roasted potatoes: cut up some potatoes into small pieces, coat with oil, garlic powder, and pepper then baked at the same time as the salmon on a different rack until golden brown.
