Ugly Black Bean and Ham Soup

Delicious ham and black bean soup. Ignore the fact that it's pretty ugly, it's healthy, hearty and was a hit for dinner. Just close your eyes and eat it.

Ingredients

  • 1 ham bone meat removed
  • 2-3 cups of chopped ham
  • 1 cup of chopped carrots
  • 1 cup of chopped celery
  • 8 cups of strong vegetable stock
  • 1/2 cup diced white onion
  • 2 cloves garlic minced
  • 1 can of black beans drained and rinsed well 19oz

Instructions

    Cup of Yum
  1. Combine all ingredients into your crockpot and cook on low for 8-10 hours. Alternately, place into a large soup pot and simmer on low heat until the vegetables are cooked through.
  2. Remove the ham bone and any other small pieces of bone that might have fallen off.
  3. Puree some of the soup mix with a hand blender to make a thicker broth.
  4. Serve and enjoy!
