Ugly Black Bean and Ham Soup

Delicious ham and black bean soup. Ignore the fact that it's pretty ugly, it's healthy, hearty and was a hit for dinner. Just close your eyes and eat it.

Ingredients
- 1 ham bone meat removed
- 2-3 cups of chopped ham
- 1 cup of chopped carrots
- 1 cup of chopped celery
- 8 cups of strong vegetable stock
- 1/2 cup diced white onion
- 2 cloves garlic minced
- 1 can of black beans drained and rinsed well 19oz
Instructions
- Combine all ingredients into your crockpot and cook on low for 8-10 hours. Alternately, place into a large soup pot and simmer on low heat until the vegetables are cooked through.
- Remove the ham bone and any other small pieces of bone that might have fallen off.
- Puree some of the soup mix with a hand blender to make a thicker broth.
- Serve and enjoy!
