Umeshu Plum Wine (梅酒)
Umeshu Plum Wine is a traditional preserved beverage made by layering fresh ume plums with rock sugar and liquor in a sterilized jar. The mixture is left to steep in a cool, dark place for at least six months, allowing the fruit to infuse the alcohol with a sweet, fruity flavor. The result is a sweet plum wine with a balance of tartness and sweetness from the plums and rock sugar.
Ingredients
- 2 lb ume plum fruits
- 1 lb rock sugar *1
- 8 cups liquor *2
Instructions
- Soak plum fruits in water for 3 hours.
- Stylise the glass jar by boiling or wipe with spirits or alcohol wipes and set aside.
- Wash the plum fruits thoroughly under running water.
- Remove excess water off the plum fruits by gently tapping the fruits.
- Remove the stem ends with a toothpick or a bamboo skewer.
- Place rock sugar and ume plum fruits alternately in layers into the glass jar.
- Pour the liquor of your choice into the glass jar.
- Put the lid on and leave it at a cool place where no direct sunlight for minimum 6 months.
Notes
- Adjust rock sugar between 500–800g (1–1.8lb) to vary the sweetness of the plum wine.
- Use liquor with at least 35% alcohol content, such as vodka, rum, or gin, for proper infusion and preservation.
- Store the jar in a cool, dark place without direct sunlight for a minimum of 6 months to develop flavors.
- This recipe uses 350g plums, 280g rock sugar, and 700ml vodka as an example ratio.
