  • 2 lb ume plum fruits
  • 1 lb rock sugar *1
  • 8 cups liquor *2

Instructions

  1. Soak plum fruits in water for 3 hours.
  2. Stylise the glass jar by boiling or wipe with spirits or alcohol wipes and set aside.
  3. Wash the plum fruits thoroughly under running water.
  4. Remove excess water off the plum fruits by gently tapping the fruits.
  5. Remove the stem ends with a toothpick or a bamboo skewer.
  6. Place rock sugar and ume plum fruits alternately in layers into the glass jar.
  7. Pour the liquor of your choice into the glass jar.
  8. Put the lid on and leave it at a cool place where no direct sunlight for minimum 6 months.

Notes

  • Adjust rock sugar between 500–800g (1–1.8lb) to vary the sweetness of the plum wine.
  • Use liquor with at least 35% alcohol content, such as vodka, rum, or gin, for proper infusion and preservation.
  • Store the jar in a cool, dark place without direct sunlight for a minimum of 6 months to develop flavors.
  • This recipe uses 350g plums, 280g rock sugar, and 700ml vodka as an example ratio.
