Umeshu Plum Wine (梅酒)
Description
This Umeshu Plum Wine recipe begins by soaking ume plums in water, washing, drying, and removing stems to prepare them for infusion. Rock sugar and ume plums are layered alternately in a sterilized glass jar. High-proof liquor (above 35% alcohol, such as vodka, rum, or gin) is poured over the fruit and sugar to cover them. The jar is sealed and stored in a cool place away from direct sunlight for a minimum of six months.
During this time, the alcohol extracts the flavors and aromas from the plums, with the rock sugar sweetening the mixture. The finished umeshu offers a balanced flavor profile that is fruity, sweet, and subtly tart. It can be served chilled, with ice, or as a cocktail ingredient.
The process requires patience, as the steeping period affects the depth of flavor. Adjusting the amount of rock sugar allows control over sweetness. Choosing a liquor with sufficient alcohol content is essential for preservation and flavor extraction. The recipe notes that the nutritional value is for the whole jar, and different liquor and sugar quantities can be used to vary sweetness and alcohol strength in the final product.
