Ingredients

  • 2 14.5 ounce cans butter or fava beans, drained and rinsed
  • 1 cup halved cherry tomatoes
  • 3/4 cup finely chopped yellow onion
  • 1/4 cup chopped flat-leaf parsley
  • 3 Tablespoons red wine vinegar
  • 2 Tablespoons extra virgin olive oil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon cayenne
  • 1/2 teaspoon freshly ground black pepper
  • 1/4 teaspoon salt

Instructions

  1. Toss the beans, tomatoes, onion, and parsley together in a large bowl.
  2. In a small bowl, whisk together the vinegar, oil, oregano, cayenne, pepper, and salt. Pour over the bean mixture and toss well to coat.
  3. Let rest at room temperature for one hour before serving. Refrigerate leftovers.
