Uštipci

Uštipci are fried dough balls that are popular in Bosnia and Herzegovina, Croatia, North Macedonia, Serbia and Slovenia where they are known as miške.

Ingredients

  • 3 cups flour , sifted
  • 2 eggs , slightly beaten
  • 1 tablespoon active dry yeast
  • 1 teaspoon salt
  • 1½ cup warm milk
  • 1 teaspoon sugar
  • vegetable oil (for frying)

Instructions

  1. In the bowl of a stand mixer, mix half of the milk, with the yeast and sugar.
  2. Let it rise for 15 minutes at room temperature and away from drafts.
  3. Add the eggs.
  4. Add the flour and gradually incorporate the remaining milk while kneading with for one minute.
  5. Add the salt and mix until the dough is homogeneous. The dough should be slightly runny but have a denser texture than a pancake batter.
  6. Cover the dough with a cloth and let it rise for 30 minutes, stirring once after 15 minutes.
  7. In a deep skillet, heat a large amount of oil over high heat until it reaches a temperature of 350 F (170 C).
  8. Reduce heat to medium, take tablespoons of dough and immerse in hot oil.
  9. Fry a few minutes on each side until golden brown.
  10. The temperature of the oil must be maintained at 350 F (170 C) during the frying.
  11. Place the donuts on paper towels.
  12. Serve hot with cottage cheese, sour cream or jam or simply sprinkle with sugar.
