Vegan Alfredo
The Vegan Alfredo sauce blends raw cashews with vegetable broth into a creamy, dairy-free sauce. It can be seasoned with black pepper and optional red pepper flakes before mixing with cooked pasta. The cashew base provides richness and creaminess suitable for a substitute Alfredo.
Ingredients
- 1 cup cashews raw
- 3 cups vegetable broth
- black pepper to taste
- ¼ teaspoon crushed red pepper flakes optional
Instructions
- Add the cashews and veggie broth to a blender. Blend for one minute.
- Add the sauce to a pot and heat over medium low heat. Add the black pepper and crushed red pepper (if using).
- Add your cooked pasta into the pot, mix well, and serve immediately. You could also use the sauce for this Vegan White Lasagna.
Notes
- Use raw cashews without roasting or added salt for the best control over flavor.
- The sauce will thicken after heating and when cooled; stir in vegetable broth to adjust consistency before reheating.
- Double the recipe to have extra sauce stored in the refrigerator for future use.
