Description
This Vegan Alfredo sauce recipe uses raw cashews blended with vegetable broth to create a smooth sauce. Heating the blended sauce gently on the stove allows it to thicken, while black pepper and crushed red pepper flakes add subtle spice. The creamy texture comes from the cashews, and the sauce can coat pasta or be used in other recipes like vegan white lasagna.
The sauce has a mild, nutty taste and velvety texture, deriving from the raw cashews and vegetable broth. It thickens on heating and firming when cooled but can be thinned with broth.

Ingredients
- 1 cup cashews raw
- 3 cups vegetable broth
- black pepper to taste
- ¼ teaspoon crushed red pepper flakes optional
Instructions
- Add the cashews and veggie broth to a blender. Blend for one minute.
- Add the sauce to a pot and heat over medium low heat. Add the black pepper and crushed red pepper (if using).
- Add your cooked pasta into the pot, mix well, and serve immediately. You could also use the sauce for this Vegan White Lasagna.
Notes
- Use raw cashews without roasting or added salt for the best control over flavor.
- The sauce will thicken after heating and when cooled; stir in vegetable broth to adjust consistency before reheating.
