  • 3 cups vegetable broth
  • black pepper to taste
  • ¼ teaspoon crushed red pepper flakes optional

Instructions

  1. Add the cashews and veggie broth to a blender. Blend for one minute.
  2. Add the sauce to a pot and heat over medium low heat. Add the black pepper and crushed red pepper (if using).
  3. Add your cooked pasta into the pot, mix well, and serve immediately. You could also use the sauce for this Vegan White Lasagna.

Notes

  • Use raw cashews without roasting or added salt for the best control over flavor.
  • The sauce will thicken after heating and when cooled; stir in vegetable broth to adjust consistency before reheating.
  • Double the recipe to have extra sauce stored in the refrigerator for future use.
