Ingredients

  • 1 ball pizza dough or store-bought pizza crust
  • ½ block tofu pressed and diced, extra firm
  • ½ tomato seeded
  • 1 cup baby spinach
  • ¼ cup pineapple diced
  • ¼ cup barbecue sauce
  • 1 Tablespoon Cajun seasoning

Instructions

  1. Pre heat oven according to directions of pizza dough.
  2. Toss diced tofu in a bowl with Cajun seasoning.
  3. Cook tofu in a non stick pan for 5-7 minutes.
  4. Spread BBQ sauce over the pizza dough.
  5. Next top in this order: spinach, tofu, pineapples, tomatoes.
  6. Drizzle top of pizza with more BBQ sauce.
  7. Place in oven and cook for according to dough directions.

Notes

  • Store leftover pizza in an airtight container in the refrigerator for up to 3 days.
  • Reheat pizza in the microwave in 1-minute increments or warm it in the oven at 300°F for 7-10 minutes to maintain texture.
  • Press and drain tofu well before cooking to improve texture and allow better seasoning absorption.
