Ingredients

  • 1 pinto beans drained and rinsed, 15-ounce can
  • 1 avocado
  • 1 chipotle pepper in adobo sauce
  • ¼ teaspoon cumin
  • ¼ teaspoon onion powder
  • ¼ teaspoon garlic powder
  • ¼ teaspoon chili powder
  • ~¼ cup vegetable broth
  • 4 tortillas
  • cilantro for garnish (optional, minced

Instructions

  1. In a food processor, place the beans, avocado, chipotle pepper, cumin, onion powder, garlic powder, chili powder, and veggie broth.
  2. Pulse until the mixture is creamy. Add more broth by the tablespoon if needed to reach a creamy texture.
  3. Spread the bean mixture on half of a tortilla, fold the tortilla, and place on a non-stick pan or a pan coated with cooking spray.
  4. Cook one side until lightly brown, flip and cook the other side until lightly brown.
  5. Remove from heat, slice, and enjoy.

Notes

  • Use reserved bean liquid with vegetable broth to adjust the filling’s creaminess when blending.
  • Spread a moderate amount of bean mixture to prevent it from leaking out during cooking.
  • Warm tortillas briefly before assembling to make them more pliable and easier to fold.
