Vegan Bean Quesadillas

Vegan Bean Quesadillas combine creamy seasoned pinto beans with mashed avocado and chipotle pepper to create a rich, smooth filling. The flavorful blend is spread over tortillas and cooked on both sides until lightly browned, delivering a satisfying texture that balances softness and slight crispness. The use of southwestern spices and optional cilantro garnish provides a smoky, mildly spicy profile that complements the creamy filling. These quesadillas make a filling meal or snack and can be adapted with varying vegetable broths to adjust creaminess.

Description

Vegan Bean Quesadillas feature a mashed mixture of pinto beans, avocado, and chipotle in adobo sauce combined with spices such as cumin, onion powder, garlic powder, and chili powder. The mix is blended with vegetable broth for a creamy consistency. Spread on half of a tortilla and folded, they are cooked on a pan until each side is lightly browned, resulting in a tender yet crisp wrap. The avocado lends a smooth richness while the chipotle adds a subtle smoky heat.

Cooking the quesadillas on a non-stick or lightly coated pan allows for even toasting. Optionally, garnish with minced cilantro before serving for an herbal note that brightens the flavor. These quesadillas work well as a plant-based snack or light meal with simple, wholesome ingredients.

Warming the tortillas before assembling helps prevent cracking and makes folding easier. Be careful not to overfill the tortillas to avoid the creamy filling oozing out during cooking, ensuring neat and manageable quesadillas.
