Vegan Beef Stew

This slow cooker Vegan Beef Stew is easy and the results are rich, hearty, and tasty. Soy Curls (soy chunks) add bulk and a 'meaty' texture.

Ingredients

  • 2 cups soy curls aka soya chunks, 100g
  • 15 ounce can chopped tomatoes 400g
  • 4 cups vegetable stock 1 litre
  • 2 onions diced
  • 2 carrots diced
  • 2 celery stalks diced
  • 3 cloves garlic minced
  • ¼ cup dried green lentils (50g) or brown or red lentils, rinsed
  • 3 tablespoons soy sauce
  • 3 tablespoons tomato puree
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon sugar
  • ½ teaspoon black pepper

Instructions

  1. Rinse the soya chunks (soy curls) under running water, then soak them in a bowl of boiled water for 15 minutes, stirring them occasionally if they float. This helps to reduce the total cooking time. Drain.
  2. Add the drained soy pieces and all other ingredients to a slow cooker, and stir well. Put on the lid and cook on LOW for 7 hours or HIGH for 4 hours.
  3. Serve over rice, mashed potatoes or on its own.
