Ingredients

  • 4 cups blueberries washed and dried
  • ¼ cup sugar
  • 1 tablespoon cornstarch
  • 1 tablespoons lemon juice
  • 1 ¼ cups flour
  • ¾ cup sugar
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ⅔ cup vegan butter melted
  • 3 tablespoons almond milk

  1. Preheat oven to 375 F
  2. In a large bowl, combine blueberries, sugar, cornstarch, lemon juice
  3. Pour into a lightly greased 2 quart casserole dish
  4. In a separate bowl, stir together the flour, sugar, baking powder and salt,
  5. Then mix in the vegan butter and almond milk until a thick batter is formed
  6. Drop the batter in large scoops on the surface of the cobbler,
  7. Bake in the preheated oven for 45-55 minutes, or until the filling is bubbly and the topping is golden
  8. Allow to cool at least 10 minutes before serving
