Vegan Carrot Bacon

Ingredients

  • 2 cups carrots thinly sliced
  • 3 tbsp soy sauce swap for coconut aminos for keto
  • 2 tbsp olive oil
  • ½ tbsp maple syrup omit for keto
  • ¼ tsp paprika
  • ½ tbsp garlic powder
  • 2-3 drops liquid smoke

Instructions

  1. Preheat oven to 400ºF. Grab your carrots and start thinly slicing them. 
  2. Add sliced carrots to a mixing bowl, then add the soy sauce, olive oil, maple syrup, paprika, garlic powder, and liquid smoke. Let marinate for 15 minutes. 
  3. Line a baking sheet with parchment paper and then place carrots on the sheet. 
  4. Bake for 8-12 minutes, depending on how thick the carrots are. 
  5. Let cool for about 5 minutes then enjoy!
