Vegan Chia Panna Cotta with Berries
This vegan chia panna cotta uses soy milk and chia seeds to create a creamy, gelatin-free dessert that sets in the refrigerator. Vanilla sugar is added for flavor, and it is served with either fresh berries in summer or cooked mixed berry jam in colder months, offering a sweet, fruity contrast to the subtle vanilla and creamy texture of the panna cotta.
Ingredients
- 2 ½ cups soy milk
- 6 tablespoons chia seeds
- ½ teaspoon vanilla sugar
Jam:
- 2.2 lb mixed berries
- 1/4 cup water
- 1 ½ cups sugar
Instructions
- Heat half of the soy milk until it comes close to a boil.
- Pour into a large dish and add the rest of the (cold) soy milk to make the mixture lukewarm.
- Add the chia seeds and whisk the seeds so that they do not stick together.
- Add the vanilla sugar to your taste.
- Pour the mixture into a dessert glass and refrigerate it for at least one hour.
- Serve with a tasty jam in winter and fresh berries in the summer.
- Tip! You can also bake the mixture for about 10 minutes; then pour into well-cleaned, glass jar. Keep cold.
