The vegan chia panna cotta combines soy milk with chia seeds and vanilla sugar to create a plant-based dessert that thickens without gelatin. Heating half the soy milk nearly to boiling helps soften the chia seeds, which swell as they absorb liquid, forming a pudding-like consistency after refrigerating. The mixture is whisked thoroughly to evenly distribute the seeds and prevent clumping before chilling for at least an hour.
The dish is topped with a berry component, which can be a homemade jam prepared by cooking mixed berries, water, and sugar together or fresh mixed berries in season. This adds a vibrant fruit flavor and balances the creamy texture with tartness and sweetness. The panna cotta can also be baked briefly for a different texture and presentation when set in glass jars.

Ingredients
- 2 ½ cups soy milk
- 6 tablespoons chia seeds
- ½ teaspoon vanilla sugar
Jam:
- 2.2 lb mixed berries
- 1/4 cup water
- 1 ½ cups sugar
Instructions
- Heat half of the soy milk until it comes close to a boil.
- Pour into a large dish and add the rest of the (cold) soy milk to make the mixture lukewarm.
- Add the chia seeds and whisk the seeds so that they do not stick together.
- Add the vanilla sugar to your taste.
- Pour the mixture into a dessert glass and refrigerate it for at least one hour.
- Serve with a tasty jam in winter and fresh berries in the summer.
- Tip! You can also bake the mixture for about 10 minutes; then pour into well-cleaned, glass jar. Keep cold.
