Vegan Coconut Caramel Bites

Vegan Coconut Caramel Bites are small balls made from toasted shredded coconut, sweet dates, almond butter, and a pinch of salt. The toasted coconut provides a rich, toasty flavor and chewy texture, while dates add natural sweetness and stickiness to bind the mixture. Almond butter contributes creaminess and richness. Ingredients

  • 1.5 cups coconut shreds , small to medium shred, unsweetened and fresher the better
  • 1 dates 11-12, heaping cup
  • 1/4 cup almond butter or sun butter
  • 1/4 tsp salt

Instructions

  1. Toast the coconut over a skillet until golden, keep stirring after the first minute.- Let the coconut cool for 10 mins.
  2. Add the coconut to food processor and process to make smaller shreds, then add the dates and process until dates are evenly distributed over the coconuts- Add the salt and the almond butter and process again until the mixture forms fat, crumbs that sticks together easily.
  3. If the mixture is not sticking together easily, add some more almond butter or if it is too crumbly then add a tsp of oat flour or regular flour.
  4. Pulse a couple of times to combine. then shape into balls.
  5. Store them for up to a week in the refrigerator and a month in the freezer.

Notes

  • Toast the shredded coconut until golden for richer flavor before processing.
  • If the mixture is not sticky enough to form balls, add more almond butter or a teaspoon of oat or regular flour.
  • Optionally roll finished bites in shredded coconut, cocoa powder, or seeds for different textures.
  • Add spices like nutmeg, cinnamon, chai spice, vanilla paste, cardamom, or fennel seeds for flavor variations.
  • Chill shaped bites on parchment paper for at least 30 minutes to set before serving.
  • Store refrigerated up to one week or freeze up to one month for longer keeping.
