Description
To make these coconut caramel bites, shredded coconut is toasted in a skillet until golden brown, enhancing its flavor and aroma. After cooling, the coconut is finely processed with dates until evenly combined. Salt and almond butter are then added and processed until the mixture forms sticky crumbs that hold together well. If needed, more almond butter or a small amount of oat or regular flour can be added to adjust consistency.
The mixture is shaped into bite-sized balls, which can optionally be rolled in additional shredded coconut, cocoa powder, or seeds like hemp or sesame for extra texture and appearance. Variations including warming spices such as nutmeg, cinnamon, or chai spice, or additions like vanilla paste or cardamom, provide flexible flavoring options with an Indian twist.
These bites can be stored refrigerated for up to a week or frozen for a month, making them convenient make-ahead snacks. Chilling on parchment before serving helps set their shape and reduces mess. Ingredients
- 1.5 cups coconut shreds , small to medium shred, unsweetened and fresher the better
- 1 dates 11-12, heaping cup
- 1/4 cup almond butter or sun butter
- 1/4 tsp salt
Instructions
- Toast the coconut over a skillet until golden, keep stirring after the first minute.- Let the coconut cool for 10 mins.
- Add the coconut to food processor and process to make smaller shreds, then add the dates and process until dates are evenly distributed over the coconuts- Add the salt and the almond butter and process again until the mixture forms fat, crumbs that sticks together easily.
- If the mixture is not sticking together easily, add some more almond butter or if it is too crumbly then add a tsp of oat flour or regular flour.
- Pulse a couple of times to combine. then shape into balls.
- Store them for up to a week in the refrigerator and a month in the freezer.
Notes
- Toast the shredded coconut until golden for richer flavor before processing.
- If the mixture is not sticky enough to form balls, add more almond butter or a teaspoon of oat or regular flour.
- Optionally roll finished bites in shredded coconut, cocoa powder, or seeds for different textures.
