Cupcakes:
- 280 ml coconut milk the tinned kind, light
- 2 Teaspoons lime juice
- 230 g self-raising flour
- 180 g caster sugar
- ½ Teaspoon vanilla extract
- 2 Tablespoons coconut oil 30g, extra virgin, melted
- Zest of lime 1 lime
Coconut frosting:
- 90 g coconut oil extra virgin
- 450 g icing sugar
- 4 Tablespoons coconut milk tinned, light
To top:
- lime zest
- desiccated coconut

Notes
- Store in an airtight container at room temperature or in the fridge for up to 3 days. Frosting will become stiff if stored in the fridge so I recommend bringing the cupcakes to room temperature before serving.
