Ingredients

Cupcakes:
  • 280 ml coconut milk the tinned kind, light
  • 2 Teaspoons lime juice
  • 230 g self-raising flour
  • 180 g caster sugar
  • ½ Teaspoon vanilla extract
  • 2 Tablespoons coconut oil 30g, extra virgin, melted
  • Zest of lime 1 lime
Coconut frosting:
  • 90 g coconut oil extra virgin
  • 450 g icing sugar
  • 4 Tablespoons coconut milk tinned, light
To top:
  • lime zest
  • desiccated coconut

Notes

  • Store in an airtight container at room temperature or in the fridge for up to 3 days. Frosting will become stiff if stored in the fridge so I recommend bringing the cupcakes to room temperature before serving.
