Vegan Double Chocolate Chip Cookies

Ingredients

  • 1/2 cup coconut oil solid
  • 1/2 cup sugar
  • 2 tbsp agave nectar
  • 1 Flaxseed 1 tbsp flax meal, 3 tbsp warm water, used as egg substitute
  • 1 tsp vanilla extract
  • 1/2 tsp vinegar
  • 2/3 cup flour
  • 1/4 cup Dutch-process cocoa powder
  • 1/2 tsp baking soda
  • 1 tsp baking powder
  • 1/3 cup dairy-free chocolate chips

Instructions

  1. Preheat oven to 350F.
  2. Beat the coconut oil, sugar, and agave nectar until the coconut oil is no longer lumpy.
  3. In a small bowl, mix together flax meal and warm water and let stand until thickened.
  4. Add flax egg, vinegar and vanilla extract to the coconut oil mixture.
  5. Sift in flour, cocoa powder, baking soda, baking powder.
  6. Mix until dough forms. Fold in the chocolate chips.
  7. Divide into 1-inch balls and set on a lined baking pan at least 2 inches apart.
  8. Bake for 12-15 minutes until edges are crispy and the middle looks matte. Under-baking will ensure that they'll come out chewy.
  9. Remove from oven and let cool on a wire rack. Enjoy!
