Vegan Lentil Loaf

Ingredients

  • 2 ½ cups cooked green lentils
  • 1 ½ cups Italian Style Bread Crumbs
  • ½ cup ketchup
  • ¼ white onion
  • ½ tablespoon fresh garlic minced
  • 2 teaspoons cumin
  • 2 teaspoons salt
  • 2 teaspoons pepper

Instructions

  1. Preheat the oven to 350°F and line a baking dish or sheet with tin foil.
  2. Place 1 ½ cups of the cooked lentils, along with the garlic, onion, and seasonings, in a food processor. Blend until well combined.
  3. Place the mixture in a medium bowl along with the remaining cooked lentils and breadcrumbs.
  4. Mix well and form into a loaf.
  5. Place in the prepared pan and cook for about 15 minutes.
  6. Remove from the oven and spread the ketchup evenly across the top and place back in the oven for another 10 minutes.
  7. Remove, let cool, and enjoy!
