Vegan Mug Brownies

Ingredients

  • 3 tbsp all-purpose flour
  • ¼ tsp baking powder
  • 2 tbsp sugar
  • 1 tbsp dark cocoa powder
  • 1 tbsp coconut oil or substitute sunflower or canola oil
  • 2 tbsp almond milk or soy milk
  • ¼ tsp vanilla extract
  • ⅛ tsp salt
  • 1 tbsp dark chocolate chips
  • 1 tbsp chopped walnuts

Instructions

  1. Place dry ingredients (flour, sugar, cocoa powder, salt, and baking powder) in a large microwave-safe mug.
  2. Whisk to combine.
  3. Add almond milk, oil, and vanilla extract and stir to combine well.
  4. Fold in the chocolate chips and walnuts.
  5. Place mug in the microwave and cook for 60 seconds on high power.
  6. Check the mug brownie. If it is still wet, cook for another 30 seconds. Usually, they remain just a bit raw in the centre after the first 60 seconds, and that’s a clue to stop; if not, it could end up overcooked and dry.

Notes

  • Be creative with your mug cakes! Swap the chips for shredded coconut or blueberries—either way is delicious.
