Vegan Peach Cobbler
This vegan peach cobbler combines sliced peaches coated in a cinnamon-spiced sugar mixture, topped with a batter made from flour, sugar, baking powder, salt, melted vegan butter, and almond milk. The cobbler bakes until bubbling and golden, yielding a warm dessert with a tender cake-like topping and juicy fruit filling. It can be served with vegan whipped cream.
Ingredients
- 5 cups peach sliced
- 2 tablespoons sugar
- 1 tablespoon cornstarch
- 1 teaspoon cinnamon
- 1 ¼ cups flour
- ¾ cup sugar
- 1 teaspoon baking powder
- ½ teaspoon salt
- ⅔ cup vegan butter melted
- 3 tablespoons almond milk unsweetened
Instructions
- Preheat oven to 350 F
- In a large bowl, combine the sliced peaches, sugar, cornstarch and cinnamon together.
- toss until all the peaches are well coated.
- Transfer the peaches to a 2 quart baking dish; set aside
- In a separate bowl, combine the flour, sugar, baking powder, and salt. Whisk together until mixed.
- Pour in the melted vegan butter and almond milk.
- Mix until dry ingredients are just moistened and forms like a cake batter.
- Spoon the cake batter over the peaches
- Bake in preheated oven for 50-55 minutes, or until the filling is bubbly and the cake is golden
- Serve warm with vegan whipped cream if desired
