Ingredients

  • ¼ cup coconut oil
  • 1 cup peanut butter
  • 1 cup light brown sugar
  • ¼ cup granulated sugar
  • 1 ½ cups all-purpose flour
  • ½ teaspoon baking soda
  • ¾ teaspoon baking powder
  • 2 teaspoons apple cider vinegar
  • ½ teaspoon fine grain sea salt
  • 1 teaspoon pure vanilla extract
  • 1 cup dark chocolate chopped

Instructions

  1. Preheat oven to 350ºF. Grease two cookie sheets or line with parchment paper, and set aside.
  2. In a medium bowl, beat together the coconut oil, peanut butter, brown sugar and granulated sugar until all are combined.
  3. Add the flour, baking soda, baking powder, vinegar, salt and vanilla. Beat until batter comes together.
  4. Fold in the chopped dark chocolate chunks.
  5. Drop the batter onto the cookie sheets by the tablespoon full, spacing about 2 inches apart.
  6. Bake for 10-12 minutes, or until golden brown on top.
  7. Enjoy warm!
