Ingredients
- 2 ½ tablespoons water warm
- 1 tablespoon ground flax seeds
- 1 ¾ cups vanilla Plant Folk creamer
- ⅓ cup pureed pumpkin
- 1 ½ teaspoons vanilla extract
- 2 cups all-purpose flour whole wheat will work
- 1 ½ tablespoons granulated sugar
- 1 tablespoon brown sugar
- 3 teaspoons baking powder
- ¼ teaspoon salt
- 1 1/2 teaspoons pumpkin spice
Instructions
- Turn on your waffle iron.
- In a small bowl, whisk together the warm water and ground flax seeds until thoroughly combined. Set aside for 10 minutes.
- In a medium bowl, whisk together the Plant Folk creamer, pureed pumpkin, and vanilla extract. Set aside.
- In a large bowl, whisk together the flour, both sugars, baking powder, salt, and pumpkin spice.
- Create a well in the center of the dry ingredients and pour in the milk mixture and flax mixture. Whisk gently, just until combined. Make sure to not overmix.
- Scoop the desired amount of batter onto the preheated waffle iron. Follow your waffle iron instructions to cook. Repeat with the remaining batter until all the waffles are cooked.

Notes
- Variations:
- Classic – serve them with jams or compotes and drizzle with maple syrup!
- Add some crunch – top with some pecans, candied sweet potatoes, or pumpkin seeds!
- Fruity – serve with some pomegranate seeds, dried figs, berries, apples, or avocadoes.
- Savory – Who says you can only make sweet waffles? Reduce the amount of sugar when making the batter and add chopped chives or spring onions. You can serve with a sprinkling of vegan cheese on top!
