Ingredients

  • 2 ½ tablespoons water warm
  • 1 tablespoon ground flax seeds
  • 1 ¾ cups vanilla Plant Folk creamer
  • cup pureed pumpkin
  • 1 ½ teaspoons vanilla extract
  • 2 cups all-purpose flour whole wheat will work
  • 1 ½ tablespoons granulated sugar
  • 1 tablespoon brown sugar
  • 3 teaspoons baking powder
  • ¼ teaspoon salt
  • 1 1/2 teaspoons pumpkin spice

Instructions

  1. Turn on your waffle iron.
  2. In a small bowl, whisk together the warm water and ground flax seeds until thoroughly combined. Set aside for 10 minutes.
  3. In a medium bowl, whisk together the Plant Folk creamer, pureed pumpkin, and vanilla extract. Set aside.
  4. In a large bowl, whisk together the flour, both sugars, baking powder, salt, and pumpkin spice.
  5. Create a well in the center of the dry ingredients and pour in the milk mixture and flax mixture. Whisk gently, just until combined. Make sure to not overmix.
  6. Scoop the desired amount of batter onto the preheated waffle iron. Follow your waffle iron instructions to cook. Repeat with the remaining batter until all the waffles are cooked.

Notes

  • Variations:
  • Classic – serve them with jams or compotes and drizzle with maple syrup!
  • Add some crunch – top with some pecans, candied sweet potatoes, or pumpkin seeds!
  • Fruity  – serve with some pomegranate seeds, dried figs, berries, apples, or avocadoes.
  • Savory – Who says you can only make sweet waffles? Reduce the amount of sugar when making the batter and add chopped chives or spring onions. You can serve with a sprinkling of vegan cheese on top!
