Vegan Rice Krispie Treats
Vegan Rice Krispie Treats combine melted vegan marshmallows and coconut oil with crispy rice cereal to create sticky, sweet bars. These treats are soft but hold their shape well, delivering a familiar marshmallow-cereal texture without dairy or gelatin, ideal for vegan-friendly snacking or dessert.
Ingredients
- 10 oz vegan marshmallows chopped, brand: Dandies
- ¼ cup coconut oil softened
- 4 ½ cups rice krispie cereal check that it's vegan
- ⅛ tsp salt
- ¼ tsp vanilla extract
Instructions
- In a large nonstick pot, heat the coconut oil over low heat.
- Add the vegan marshmallows and stir to coat them with coconut oil. Continue stirring over low heat until the marshmallows are mostly melted. You can use the back of a spoon or spatula to help break them up.
- Add the rice krispie cereal, and stir to combine. Continue to fold the mixture together.
- Lightly grease an 8" square baking pan, and pour in the rice krispie mixture. It will be very sticky and somewhat stiff, so you may need to use your hands to form it into the pan. Be careful—the mixture is hot!
- Set aside to cool for one hour.
- Cut into squares and serve!

- Substitute coconut oil with vegan butter if preferred for a slightly different flavor and texture.
- Choose vegan marshmallows like Dandies and confirm the rice cereal’s vegan status, e.g., Nature's Path brand.
- After cooling, consider topping the treats with dark chocolate drizzle, sprinkles, or chocolate chips for variety.
