Vegan Rice Pudding

This creamy vegan rice pudding is made with almond milk and flavored with orange, maple, and warm cinnamon spices.

Ingredients

  • 3 cups almond milk
  • 1 cup water
  • 1 cup long grain white rice
  • Zest of 1 orange
  • ¼ cup maple syrup
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • ½ tsp salt

Instructions

    Cup of Yum
  1. Place all the ingredients in a pot.
  2. Grate the orange. Whisk ingredients together well.
  3. Put the pot over the stove to boil, stirring occasionally to make sure the rice doesn't stick to the bottom.
  4. When it starts to thicken, stir continuously until rice is cooked. It will take 20-30 minutes.
  5. Serve warm with more cinnamon sprinkled on top.

Notes

  • This recipe yields approximately 4 cups of rice pudding. One serving is ½ cup.
