Vegan Split Pea Soup
Vegan Split Pea Soup is a thick, hearty soup made by simmering split peas with onion, garlic, carrot, and celery in vegetable broth. The split peas create a creamy texture once cooked down, balanced by the mellow sweetness of the sautéed vegetables. The soup is seasoned simply with salt and pepper to highlight the peas’ natural flavor.
Ingredients
- 1 Tablespoon vegetable oil or olive oil
- 1 medium yellow onion diced
- 2 garlic cloves, minced
- 1 large carrot diced
- 2 ribs celery sliced
- 2 cups split peas
- 6 cups vegetable broth
- salt to taste
- black pepper to taste
Instructions
- Heat oil in a large pot (with a lid) over medium heat.
- Add onion, garlic, carrots, and celery, and sauté for 5 to 7 minutes.
- Add split peas, and vegetable broth, cover with the lid, lower the heat to a simmer, and cook for 45 minutes. Uncover and cook for 15 minutes.
- Serve garnished with salt and pepper.
Notes
- Older split peas may need longer cooking times; soaking them overnight can help speed cooking.
- Add salt only after the peas are fully cooked to help them soften properly.
