  • 2 cups split peas
  • 6 cups vegetable broth

Instructions

  1. Heat oil in a large pot (with a lid) over medium heat.
  2. Add onion, garlic, carrots, and celery, and sauté for 5 to 7 minutes.
  3. Add split peas, and vegetable broth, cover with the lid, lower the heat to a simmer, and cook for 45 minutes. Uncover and cook for 15 minutes.
  4. Serve garnished with salt and pepper.

Notes

  • Older split peas may need longer cooking times; soaking them overnight can help speed cooking.
  • Add salt only after the peas are fully cooked to help them soften properly.
