Ingredients
- 7 oz pasta
- 10 oz silken tofu
- ¼ cup Tahini
- 1 ½ cups plant based milk
- ½ tsp cumin
- 1 tsp salt
- ¼ cup nutritional yeast
- ¼ cup lemon juice (juice of 1 lemon)
- 1 tbsp olive oil
- 1 large onion diced
- 2 cloves garlic minced
Instructions
- Cook the pasta according to packaging instructions until al dente. This usually takes around 10-12 minutes. Drain and rinse when done, but retain ½ cup pasta cooking water.
- Add the tofu, tahini, plant based milk, cumin, salt, nutritional yeast and lemon juice to a blender or food processor. Blend until smooth.
- Heat the olive oil in a large frying pan or skillet. Add the onion and garlic, and cook for 5 minutes, until softened and fragrant.
- Pour in the sauce and stir thoroughly, before adding the pasta and pasta water. Divide between plates/bowls and serve with garnishes of your choice!
