Vegan Tofu Larb Salad
Vegan Tofu Larb Salad presents a fresh, herbaceous take on traditional larb using crumbled firm tofu as the protein. The tofu is sautéed with lime juice and combined with cilantro, mint, green onion, jalapeño, and sliced onion, creating a tangy, mildly spicy filling served wrapped in crisp iceberg or romaine lettuce leaves. The dish delivers a balance of bright, citrusy notes with herbal freshness and a slight bite from peppers, all enclosed in crunchy lettuce for a light, flavorful vegan salad.
Ingredients
- 1 teaspoon canola oil or vegetable oil
- 14 ounces tofu extra-firm, pressed and crumbled
- 3 Tablespoons lime juice divided
- 2 ½ Tablespoons cilantro minced
- 2 Tablespoons soy sauce
- 1 green onion sliced
- ½ Tablespoon jalapeno pepper minced
- ¼ cup onion thinly sliced, or red or white or yellow
- 2 Tablespoons mint minced
- 8 iceberg lettuce or romaine lettuce leaves
Instructions
- Heat the oil in a saucepan over medium heat. Add the tofu and 1 tablespoon of the lime juice, and sauté for 4 or 5 minutes or until the tofu is light brown.
- Place the tofu in a medium bowl and combine with the remaining 2 tablespoons lime juice, cilantro, soy sauce, green onion, jalapeño, onion, and mint. Mix well.
- Serve in the lettuce leaves.
Notes
- Use extra-firm tofu pressed to remove excess moisture for a better texture.
- Add sriracha or fresh chilies to increase the spiciness if preferred.
- Garnish with additional fresh lime and cilantro to enhance brightness before serving.
