Vegan Walnut Oat Scones
Vegan Walnut Oat Scones combine rolled oats, whole wheat and all-purpose flours, sugar, baking powder, and chopped walnuts for a hearty dough enriched with plant-based milk, vinegar, vegan butter, and oil. The scones have a tender crumb with a slightly crunchy sugar topping and nutty walnut pieces. Baking at a high temperature creates lightly browned, golden wedges with a satisfying balance of textures and mild sweetness.
Ingredients
- ½ cup plant-based milk
- 1 teaspoon vinegar
- 2 tablespoons vegan butter
- 1 ¾ cup rolled oats of
- ¾ all-purpose flour
- ¾ cup whole wheat flour or sub for all-purpose flour
- ¾ cup granulated sugar
- 1 tablespoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- ½ cup walnuts chopped, plus more for topping
- 2 tablespoons canola oil
- ¼ cup brown sugar
Instructions
- Preheat the oven to 425 degrees F; spray cookie sheet with nonstick cooking spray, or parchment paper or my new favorite: a silicone pad!!
- Mix together the plant-based milk and vinegar and set aside.
- Combine dry ingredients and walnuts in a large bowl, mix well.
- Melt the vegan butter and combine in a small bowl with the sour plant-based milk, and oil; add to dry ingredients and stir until just mixed.
- Turn the dough onto a lightly floured surface and knead a few times to form into a ball; flatten the dough into an 8-in.-diameter circle and cut into eight wedges.
- Sprinkle the brown sugar on top of the scones, place more walnuts on top
- Put the wedges on a prepared cookie sheet and bake for 12 to 15 minutes, until lightly browned. Cool slightly on a cooling rack.
Notes
- Adding natural vanilla extract enhances the aroma of the scones.
- Spices like cinnamon or ginger powder complement the walnuts and oats well.
- Dried fruits such as raisins, cranberries, cherries, or blueberries can be added for extra flavor (½ to 1 cup).
- Lemon or orange zest brightens the flavor and pairs nicely with nuts and dried fruit.
- Use dairy-free chocolate chips or chunks to add a chocolate twist while keeping it vegan.
